    • 1 teaspoon cumin powder
    • 1/2 teaspoon dry ginger powder
    • 1/2 teaspoon red chili powder
    • Salt to taste
    • Water as needed

    Instructions:

    1. In a saucepan, combine the soaked tamarind pulp (along with water), dates, jaggery, cumin powder, dry ginger powder, red chili powder, and salt.
    2. Cook the mixture on low heat, stirring continuously until the jaggery dissolves and the chutney thickens.
    3. Remove from heat and allow it to cool.
    4. Once cooled, blend the mixture to achieve a smooth, velvety texture, adding water if necessary.
    5. Store the tamarind chutney in a sterilized jar and refrigerate for extended shelf life.

    • 1 cup grated coconut (fresh or frozen)
    • 1/4 cup roasted chana dal
    • 2-3 green chilies
    • 2 tablespoons yogurt

    • Water as needed
