    A Flavorful Journey: How to Prepare Authentic Kerala Biryani at Home

    Kerala biryani, also known as Malabar biryani, is a mouthwatering delicacy that hails from the southern coastal state of Kerala in India. Known for its distinct flavors and aromatic spices, this biryani variation stands out from the traditional ones found across India. If you’re a fan of the rich blend of spices, tender meat, and fragrant rice, then follow this step-by-step guide to create an authentic Kerala biryani that will delight your taste buds and impress your guests.

    Ingredients:

    For the Biryani Rice:

    1. 2 cups long-grain basmati rice
    2. 4 cups water
    3. 1-inch cinnamon stick
    4. 4-5 green cardamom pods
    5. 4-5 cloves
    6. 1 bay leaf
    7. Salt to taste

    For the Biryani Masala:

    1. 500g mutton or chicken, cut into pieces (you can also use beef or vegetables for a vegetarian option)
    2. 2 large onions, thinly sliced
    3. 2 medium tomatoes, finely chopped
    4. 2 tablespoons ginger-garlic paste
    5. 2-3 green chilies, slit
    6. 1/2 cup yogurt
    7. 1/2 cup chopped cilantro (coriander leaves)
    8. 1/4 cup chopped mint leaves
    9. 1/4 cup fried onions (optional, for garnish)
    10. 1/4 cup ghee or vegetable oil
    11. 1/4 cup warm milk
    12. A pinch of saffron strands (soaked in warm milk)

    For Biryani Masala (Spice Mix):

    1. 1 teaspoon fennel seeds
    2. 1 teaspoon cumin seeds
    3. 1-inch cinnamon stick
    4. 4-5 cloves
    5. 4-5 green cardamom pods
    6. 1/2 teaspoon black peppercorns
    7. 1/2 teaspoon turmeric powder
    8. 1 teaspoon red chili powder
    9. Salt to taste

    Step-by-Step Guide:

    1. Marinating the Meat (or Vegetables):
      • In a large mixing bowl, add the meat (or vegetables) along with ginger-garlic paste, yogurt, half of the chopped cilantro, half of the chopped mint leaves, green chilies, and half of the Biryani Masala (Spice Mix).
      • Mix everything well, ensuring the meat (or vegetables) are coated evenly with the marinade.
      • Cover the bowl and let it marinate for at least 2 hours in the refrigerator. For the best results, marinate overnight.
    2. Preparing the Biryani Rice:
      • Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
      • Upon completion, turn off the heat and allow the biryani to rest for an additional 10 minutes before serving. Incorporate the washed rice, cinnamon stick, green cardamom pods, cloves, bay leaf, and a pinch of salt.
      • Cook the rice until it’s 70% cooked (slightly undercooked), then drain the water and set the rice aside.
    3. Frying Onions:
      • In a separate pan, heat ghee or vegetable oil and add thinly sliced onions.
      • Fry the onions until they turn golden brown and crispy. Set aside a portion for garnishing.
    4. Biryani Masala Preparation:
      • In a dry pan, roast fennel seeds, cumin seeds, cinnamon stick, cloves, green cardamom pods, and black peppercorns until fragrant.
      • Allow the spices to cool and then grind them into a fine powder.
      • Add turmeric powder, red chili powder, and salt to the ground spices. Mix well to create the Biryani Masala.
    5. Layering the Biryani:
      • In a heavy-bottomed pot or deep pan, spread a layer of marinated meat (or vegetables) at the bottom.
      • Add a layer of partially cooked rice on top of the meat (or vegetables).
      • Sprinkle a portion of the Biryani Masala, fried onions, chopped cilantro, and mint leaves over the rice.
      • Repeat the layers until all the rice and meat (or vegetables) are used up. The topmost layer should be rice.
    6. Sealing and Dum Cooking:
      • Drizzle the saffron-infused milk over the top layer of rice, along with a little ghee and fried onions.
      • Cover the pot with a tight-fitting lid or use a dough to seal the edges, ensuring no steam escapes.
      • Cook on low heat for about 20-25 minutes (chicken or vegetable) or 35-40 minutes (mutton or beef). This cooking process is called “Dum.”
      • Upon completion, turn off the heat and allow the biryani to rest for an additional 10 minutes before serving..
